Mashed Potato Substitute: Mashed Cauliflower
So Here’s my first update with food.
I went to the gym after my drinkfest in Portland… and I LOST over 4 POUNDS!
MORAL OF MY STORY: I can cut myself some slack with the drinking and partying (I’m still in my 20′s for a few mor months!) as long as I really make up for it in the gym.
I’ve gotten into the routine of going to the gym 3-5 times a week. I do the eliptical on a level 2-5 for 20-35 minutes of interval training. Then I do a few weights for EITHER arms or legs, and always end with the Ab Twist Machine.
I’m feeling super motivated! So motivated, that I used SUPER as a teeny-bopper adjective – WOAH.
Okay, so on my quest to find LOW point, snacks that are INCREDIBLY FILLING and SATISFYING… I tried out Mashed Cauliflower. I shopped around for different recipes and ultimately settled on my own combo.
Here it is:

Mashed Cauliflower
1 Head of Cauliflower.
1 White Potato peeled and cubed.
2 cups veggie stock or chicken stcock
3 tbsp parmesan cheese
1/2 a Chobani non-fat plain Greek yogurt.
Some garlic powder to taste or 2 garlic cloves

1. Boil potato and cut up cauliflower in veggie/chicken stock + water and seasoning (or garlic cloves) until very tender.
2. Drain and mash manually.
3. Add yogurt and parmesan cheese and mix with a mixer (or by hand). Add more Chobani for desire creaminess. I used the whole serving, but it was a bit tart. I suggested starting with 1/2 and adding more as needed.

This makes a LOT. I ate 1/2 of it and it was a full BOWL! If you make it as a side, I’d say it serves 3-4 large servings.
WW Points Plus in TOTAL = 10-11(depending on the amount of Chobani)
